St. Patrick's Day

St. Patick's Day started just a catholic holiday but turned into a feast day in the early 1600s. It is named after Saint Patrick who was the most recognized of the patron saints of Ireland.

So If you are looking for a good holiday meal this evening I will give you an easy recipe that my family eats on this fine holiday!

Corned Beef and Cabbage sandwiches
Serving 5 people

10 pieces of marble rye bread
1 full package of deli corned beef
2 jars of Sauerkraut (sour)
1 bottle of thousand island dressing
1 package of swiss cheese

This is one of my favorite sandwiches and I eat it not just on St. patrick's Day.

Then my family and I have our side dish of potatoes. Usually just baked but we have also had fried. This is simple enough to make, either you bake them in the oven or fry them in a pan with butter, salt, and pepper. However, if you truly want to give your friends and family a real Irish treat make them potato soup.

Potato Soup

1 cup of butter
3 cups of water
4 medium red onions thinly sliced (however, most recipes use white but I like the red onions they kick of flavor better)
10 baked potatoes peeled and cubed (I prefer a variety of sizes it truly makes the soup heartier!)
3 quarts of half and half milk: or 1 quart of half and half and 2 quarts milk ( I think heavy cream makes it tastier though, but this could be decided through one's preference)

I like to add parsley (fresh), and salt and pepper. It truly is a great Irish tradition.
